brown irish soda bread

This crunchy traditional Irish bread pairs well with a hearty stew, soup or just smeared with a bit of Irish butter and eaten with a hot cup of tea.

Makes 1 loaf

2 ½ Cups of flour

1 Cup of whole wheat flour

½ Cup of bran

¼ Cup of sugar

1 ½ Tsp of baking soda

2 Cups of sour milk (mix 2 TBS vinegar into 2 cups of milk and let sit for a couple minutes. Now you have sour milk) or you can use buttermilk as an alternative

¼ Cup of oil (I used olive but feel free to try something else)

Preheat oven to 350 degrees & grease a loaf pan with butter or baking spray

In a large bowl, mix together the flours, bran, sugar and baking soda.

Next, create a well in the center of the bowl and add the sour milk and oil. Stir until the ingredients are moistened.

Pour batter into the prepared loaf pan and bake for 1 hour or until a long toothpick inserted in the center comes out clean.
