potato salad


Growing up, my mother would make potato salads for all our summer parties and family gatherings.  Even today, whenever I see a potato salad, it instantly brings back fantastic childhood memories.  This chili-lime potato salad recipe is an awesome variation.  It’s sure to be a hit at your next summer party or family get-together!

serves 4


1 ½ Pounds of baby red or baby new potatoes

Kosher salt

¼ Cup of mayonnaise

½ Cup of chopped fresh cilantro

Freshly ground black pepper

Zest & Juice of 1 lime

½ Tsp crushed red pepper flakes (you can add more if you want to kick up the heat)


Boil halved potatoes in a large pot of water over high heat. Season the water with salt and let boil until potatoes are tender (about 10 minutes). Once the potatoes are done, drain and run under cold water to stop the cooking process.

In a large bowl mix together mayo, cilantro, salt, pepper, lime juice, lime zest & red pepper flakes.

Toss the potatoes in the dressing and taste to make sure you don’t need to adjust the seasoning. Refrigerate or serve immediately.
