teriyaki salmon on a plate

serves 8

1 C. Mirin

1 C. Soy Sauce

2 TBS. Sugar

2 TBS. Honey

8 Salmon Fillets, De-boned

Salt & Pepper

2 TBS. Toasted Sesame Seeds

4 Green Onions, Finely Chopped

To Make The Teriyaki Sauce:

In a sauce pan, combine the mirin, soy sauce, sugar and honey. Bring to a boil over medium heat and cook, whisking frequently, for 10 minutes or until mixture reduces by half. Set aside to cool.

Cooking The Salmon:

Turn oven onto a high broil setting. Place the salmon fillets skin-side down on a lined baking sheet with parchment paper. Season the fish with salt and pepper and broil for 8 minutes or until the salmon flakes with a fork.

To Plate:

Put a piece of salmon on a plate and top with a generous amount of teriyaki sauce. Add a sprinkling of sesame seeds and some green onions.
