bean salad in a white bowl


Serves 4-6

Looking to spruce up your lunch box in 2018?  This colorful, tasty salad is a favorite with both adults and kids AND tastes even better the second day!



¼ C. Extra Virgin Olive Oil

2 Limes, Juiced

½ TSP Cumin

Salt To Taste

Fresh Black Pepper To Taste

1 Pint Cherry Tomatoes, Cut In Half

1 Can Black Beans, Rinsed And Drained

1 Can Black Eye Peas, Rinsed And Drained

16 oz. Frozen Corn

½ Red Onion, Finely Chopped

1 Jalapeño, Minced

2 Avocadoes, Diced

2 TBS Cilantro, Chopped


In a medium bowl, whisk together olive oil, lime juice, cumin, salt & pepper.  Set aside.

In a large bowl, toss together tomatoes, beans, corn, red onion, jalapeño, avocado and cilantro.

Combine the dressing with the bean mixture and stir the salad until thoroughly combined.
